Strawberry Oat Breakfast Bars

Ingredients:

For the strawberry filling:

  • 2 cups strawberries
  • 2 tbsp maple syrup
  • 3 tbsp chia seeds
  • 1 tsp vanilla extract

For the bar mixture:

  • 1 cup rolled oats 
  • 1 cup of oat flour (or spelt flour)
  • 1 tsp baking powder
  • 2 bananas, mashed
  • 1/4 cup (60 ml) maple syrup
  • 1 tsp vanilla extract

Instructions:

For the filing:

Add strawberries and maple syrup to a medium saucepan set over medium heat. Heat until they soften to a slight mush, about 5-10 minutes. Bring to a boil, stirring occasionally, until it begins to break down and thicken. This us usually about 8 minutes. For a jam-consistently, use spoon to mush and break apart further.

Add in the chia seeds and vanilla, stirring and cooking for another 5 minutes. Remove from heat and allow the filling to cool. It will continue to thicken the longer it rests. For denser bars, make the night before.  

Instructions for the bars:

Preheat oven to 375F

Prepare an 8×8 baking dish by lining with parchment paper. For easy removal, leave a little overhang on the sides. Spray with coconut oil.

Place oat flour, rolled oats, and baking powder in a large bowl and mix well. 

Add bananas, maple syrup, and vanilla extract, and mix until everything is well combined and a dough-like texture is formed.

Transfer 1/2 the mixture into prepared baking pan, using spatula to press down tightly and evenly.

Spoon filling over the surface, and spread it evenly, making sure to leave room at the edge to prevent the filling from burning. Sprinkle rest of the oat mixture on top, breaking up bigger chunks and pressing down lightly.

Bake for 30 minutes until the top is golden. Remove from oven and allow to fully cool in pan before cutting into bars.

 

Strawberry ACV Poppyseed Dressing: 

A simple sweet and tangy salad dressing perfect for summer.

Ingredients: 

  • 1/2 cup chopped strawberries
  • 3 tsp organic apple cider vinegar
  • 1/4 c avocado oil
  • 2 tsp maple syrup
  • 1 tsp poppy seeds (or chia seeds)

Instructions:

Combine all of the ingredients except poppy seeds in a food processor and blend until pureed.

Stir in poppy seeds.

 

Sweet Island Strawberry Energy Balls: 

Ingredients: 

  • 2 cups unsweetened shredded coconut
  • 1/2 cup rolled oats
  • 1 cup strawberries
  • 1/2 cup walnuts, chopped
  • 4 medjool dates, pit removed
  • 1/2 cup almond butter
  • 1/4 cup dried pineapple, chopped (optional)

Instructions

Add 1 cup of shredded coconut and all the remaining ingredients (strawberries, oats, almonds, dates, almond butter) to the food processor. Process on high speed until smooth.

Scoop out 2 tablespoons of the mixture and roll it into a ball. Roll the ball into the shredded coconut. Place on a baking sheet lined with parchment paper. Repeat with the remaining strawberry mixture.

Place the baking sheet in the refrigerator for 2 hours before serving. Keep in a airtight container in the refrigerator.
