Super Easy Cauli-Popcorn Snack.
These things are so GOOD.. and guilt free. The hot thing right now is cauliflower and the many ways you can incorporate it for that low carb option. I have had a long standing relationship with this crunchy cruciferous treat for as long as I can remember. It is in the top five veggie favs for me. Even raw.
Easy but messy to coat, these are a breeze to whip up for an afternoon snack or a zesty side dish, with or without a dipping sauce!
On the left: I have added my secret buffalo seasoning WHICH I will be sharing in another post with some SUPER awesome things to come in May! You won’t be sorry for waiting. It is worth it.
The right side deets are as follow:
Ingredients:
- One large cauliflower (cut or break into smaller florets that will fit the mixing bowl you will be using)
- 1/2 cup coconut oil (melt when ready to mix)
- 2 teaspoon of each: paprika, thyme, chili powder, bay leave flakes, flaked red pepper (optional if you are sensitive to spicy foods)
- 3 teaspoon on “natural pecan” liquid smoke (if you haven’t heard of this stuff.. I just changed your LIFE.. Find it at Whole Foods.
Instructions:
- Preheat oven to 350
- Line baking sheet with parchment.
- Mix all the seasonings and coconut oil. Toss your florets with the mixture. It will take some hands on action to gently mix and coat each floret. Doesn’t take long, just messy if you’re not careful. Don’t get cray cray all up in there.
- Once coated, just simply spread evenly on your prepare bake sheet.
- Bake for 45 minutes. Try to “toss” the mixture every 15 minutes to cook evenly.
- Remove and let cool for just a few minutes then ENJOY. They are best right out of the oven so if you’re planning to add these to an evening of fun or football game get together, keep that in mind!
