Perfect Pumpkin Loaf.

Warm, buttery, spicy. Perfectly paired with coffee, this pumpkin loaf is a simple, heartwarming way to start the morning.

Ingredients:

  • 2 cups spelt flour
  • 1 tablespoon baking powder
  • 1.5 teaspoon pumpkin pie spice
  • 1 teaspoon crushed nut of choice 
  • 1/2 teaspoon himalayan salt
  • 1/2 teaspoon cayenne 
  • 1.5 cup pure pumpkin (organic can is my preference)
  • 1/2 cup maple syrup
  • 1/4 cup Coconut oil
  • 1/4 cup vegan butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking stevia

Preheat oven to 350F. Grease your loaf pan with coconut oil or coconut oil spray.

Combine all your ingredients with the exception of the crushed nut. Rolling and folding the mixture until combined well. It can be very sticky so I like to use a silicone baking spatula to really mix thoroughly. 

Pour into your loaf pan evenly. Sprinkle with nuts and a pinch of stevia. Bake until knife comes out clean when inserted into the center. Loaf will be brown, orange. It has a firm yet fluffy texture. Cool for at least ten minutes before serving.

Serve warm or chilled. This is wonderful pair with coffee in the morning or EVEN with your favorite vegan vanilla ice-cream for a sultry night treat.
