Superfood Strawberry Rhubarb Crisp. Simply sweet!

Superfood Strawberry Rhubarb Crisp.

I am so happy to finally post this recipe. Holy moly it is a favorite. Sweet, tangy. It has become one of my summer go to’s PLUS it is super easy! The hemp seeds add a super food accent to this dish BUT if you are feeling crazy mix in a few teaspoons of chia seed to the strawberry/rhubarb mixture to take it up a notch on healthy. 

Ingredients

  • 2 cups rolled oats 
  • 1/4 cup of each: hemp seed, crushed walnuts, chickpea flour, shredded coconut
  • 2 Tbsp coconut oil 
  • 2 cups chopped rhubarb 
  • 2 cups chopped strawberry 
  • 1/4 cup maple syrup

Instructions

  • Toss your rhubarb and strawberries with the maple syrup. 
  • Grease your baking pan with a little coconut oil. 
  • Mix all the dry ingredients. 
  • Mix in the coconut oil with the dry ingredients until it becomes a coarse texture. 
  • Toss the fruit into the bottom of the greased pan. 
  • Layer the dry ingredients and coconut oil evenly on top. 
  • Bake at 350 degrees for 20-25 minutes, usually until bubbly and golden.
