Maple Apple Cinnamon Scones
Maple Apple Cinnamon Scones with Maple Pecan Glaze. One of my favorite things at coffee shops are scones. Good ones are sometimes hard to find causing me to really really wish these would just magically appear. Good news, this recipe is easy enough to almost make it feel like they do. Bake these for your next weekend treat.
Ingredients:
- 2 1/4 cups all-purpose flour
- 3 tablespoons cinnamon
- 1/2 cup maple syrup
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup chopped apples
- 1 cup of the can full fat coconut milk (not the lite version or beverage liquid)
- 1 teaspoon vanilla extract
Instructions:
Line a baking sheet with parchment paper and lightly flour pan.
Whisk the flour, maple syrup, baking powder, and salt together in a medium bowl.
Add the apples to mixture, tossing lightly and coating them.
Fold in the coconut milk and vanilla. Add in more coconut milk as needed to get a well binded dough that is somewhat workable but not too sticky.
Preheat oven to 425 degrees.
Divide the dough in half and place on the prepared baking sheet. Press gently into a circle that is roughly 1 inch high. While oven is preheating, stick in freezer. Once the oven is preheated, remove the baking sheet from the freezer an cut each disk into 4 wedges. Pull the wedges apart about 1 inch to give them a little space.
Brush the tops of the dough with a little coconut milk. Bake for about 15 minutes, or until lightly browned. Let cool 5 minutes.
Maple Pecan Glaze
Ingredients:
- 1 cup pecans
- 1/2 cup pure maple syrup
- 2 tablespoons coconut oil
- 1/4 cup water
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions:
Combine all of the ingredients in a high-speed blender/vitamix, and blend until smooth and creamy. I LOVE my vitamix.
