Lentil taco meat

Such a great alternative to animal based options. Meaty, spicy, and filling, this lentil taco meat is perfect for tostadas, tacos, enchiladas.. you name it.

Try stuffing this easy enchilada bake with it!

Lentils are an excellent source of fiber, copper, phosphorus and manganese, iron, protein, zinc, and potassium. There are different types of lentils and any can be used for this lentil taco meat recipe. The different types of lentils include: red, brown/spanish, french, black/beluga, green, and the yellow/tan variety. Each with their own taste profile.

Ingredients

  • 2 cup soaked and cooked lentils
  • 2 cup black beans
  • 1 cup grated/chopped carrots
  • 3 tbsp fresh chopped cilantro
  • 3 tbsp chili powder
  • 3 tsp paprika
  • 2 tsp cumin
  • 2 cloves garlic 
  • black pepper to taste

Directions

Put all ingredients in food processor or vitamix. (my preference) 

Process until chunky, not too much to where it is like hummus.

Sauté just like taco meat! Enjoy.
