Protein Packed Granola made EASY.
Granola is a great additive to your pantry recipe book. Even better when its packed with the complete protein power of chia seeds and other super starts like flax seed and quinoa. Crunchy, crispy, and filling, try this on top of smoothies bowls, coconut yogurts, and savory dishes!
Ingredients:
- 1 cup quinoa
- 1/2 cup chia seed
- 1/4 cup flax seed (whole)
- 1/2 cup sliced almonds
- 2 cups oats or puffed corn
- 2 tsp maple syrup
- 2 tsp coconut oil
- 2 tsp cinnamon, cacao or other spices depending on the type of granola you want
Instructions:
Preheat the oven to 300 degrees. Combine all ingredients in a mixing bowl and mix well. Make sure to toss and coat evenly. Coconut oil might be liquid or solid depending on the temperature of the room you are in so sometimes, especially during wintery months, using your hands will warm it up and melt it into the mixture if it’s solid, just be sure to mix it all through the other ingredients so there aren’t any chunks of oil left. Spread the mixture in a thin layer on a baking sheet and bake for 10 minutes, until very lightly toasted.
