Chickpea Blondies

With the craze of healthy black bean brownies.. I HAD to make this recipe.

Chickpea Blondies. These were crazy good and I think they were EVEN better the next day. They went SO fast I didn’t even realize I didn’t have a “pretty” pic of them for the blog!

Ingredients:

  • 1 15 oz can chickpeas (drained)
  • 1/2 cup almond butter
  • 1/2 cup rolled oats
  • 1/4 cup pure maple syrup
  • 1/4 cup organic stevia
  • 1 tsp pure vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts  
  • Instructions:

    • Preheat oven to 350 degrees.
    • Lightly oil an 8×8 baking dish with coconut oil.
    • Combine all ingredients minus the walnuts in your nutribullet or food processor. Process until smooth.  
    • Pour into the baking dish.
    • Add the walnuts (optional) by sprinkling on top and gently pressing in with spatula.
    • Bake for 30-35 minutes until golden and the top is firm. 

    BIGGEST TIP: Allow to cool. The blondies will continue to firm up after cooling.
