Cranberry Orange Good Morning Loaf

Fresh squeezed orange juice and cranberries make this a delightful way to start the morning. This cranberry orange loaf is slightly zesty, simply sweet, and the perfect fluffy, dense. Enjoy! 

Ingredients: 

  • 2 cups unbleached all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup fresh squeezed orange juice (about 4 large oranges)
  • 1 cup coconut sugar
  • ¼ cup coconut oil, melted
  • 3 tablespoons applesauce
  • 3 tablespoons almond milk
  • 1 tablespoon orange zest (grated)
  • 2 teaspoon vanilla extract
  • 2 1/2 cups chopped cranberries (for this recipe: I simply used unsweetened dried cranberries for convenience)
  • 1/2 cup walnuts (optional)

Instructions:

  • Preheat oven to 400°F. Lightly grease a loaf pan with coconut oil. 
  • In a large bowl, place flour, baking powder, cinnamon, baking soda, and salt. Fold together until combined.
  • Add orange juice, sugar, coconut oil, applesauce, almond milk, grated orange zest, and vanilla.Whisk to combine.
  • Mix until just combined. Do not overmix/beat to death.
  • Fold in cranberries and walnuts (optional).
  • Pour batter into loaf pan evenly.
  • Bake for 30-45 minutes at 400 degrees. Bake golden and a toothpick/knife inserted in the center of the loaf comes out clean.
  • Remove from the oven; let it cool in the pan for 10-15 minutes before removing.

This cranberry orange loaf is SO good served warm with a little maple syrup drizzle. Most of the time, I dig in before I get the maple syrup on because it is so delicious. Easy to make muffins out of this batter! Give it a whirl!
