Cranberry Orange Good Morning Loaf
Fresh squeezed orange juice and cranberries make this a delightful way to start the morning. This cranberry orange loaf is slightly zesty, simply sweet, and the perfect fluffy, dense. Enjoy!
Ingredients:
- 2 cups unbleached all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup fresh squeezed orange juice (about 4 large oranges)
- 1 cup coconut sugar
- ¼ cup coconut oil, melted
- 3 tablespoons applesauce
- 3 tablespoons almond milk
- 1 tablespoon orange zest (grated)
- 2 teaspoon vanilla extract
- 2 1/2 cups chopped cranberries (for this recipe: I simply used unsweetened dried cranberries for convenience)
- 1/2 cup walnuts (optional)
Instructions:
- Preheat oven to 400°F. Lightly grease a loaf pan with coconut oil.
- In a large bowl, place flour, baking powder, cinnamon, baking soda, and salt. Fold together until combined.
- Add orange juice, sugar, coconut oil, applesauce, almond milk, grated orange zest, and vanilla.Whisk to combine.
- Mix until just combined. Do not overmix/beat to death.
- Fold in cranberries and walnuts (optional).
- Pour batter into loaf pan evenly.
- Bake for 30-45 minutes at 400 degrees. Bake golden and a toothpick/knife inserted in the center of the loaf comes out clean.
- Remove from the oven; let it cool in the pan for 10-15 minutes before removing.
