Your Delightful Daily Grind Coffee Cake
Here in Seattle coffee is in abundance, and in my time here it has been heaven. So of course it prompted me to try a coffee cake. Say hello to mornings now.
Delightful. Daily Grind.
Ingredients:
- 1 cup organic unbleached flour
- 2 cups spelt flour
- 1/2 cup brown sugar
- 2 tsp cinnamon
- 1 tsp allspice
- 1 tsp nutmeg
- 3/4 cup (melted) organic coconut oil
- 1/4cup chopped raisin, pecans or walnuts (optional)
- 3 tsp baking powder
- 1 1/4 cups almond milk
Directions:
Preheat oven to 375˚.
Combine flour(s), sugar, cinnamon, allspice, nutmeg, coconut oil (and nuts, optional) until all combined. It will be a little crumbly, but break up any clumps/pieces larger than the spoon head. Place 1 cup of mixture to be used for the topping in a separate bowl. Mix the “non topping” bowl with the baking powder, almond milk, and raisins (optional) for the batter. Grease pan of choice, I prefer a loaf pan, then pour in the batter. Finish by topping it with the 1 cup of crumbly mixture we set aside. The coffee cake batter will rise so don’t be alarmed if your pan looks rather empty.
Bake at 350˚ for 30 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan so that it has time to really set. Serve with your favorite coffee and get to your daily grind with a little delight!
