Smoky Purple Sweet Potato Soup

Smoky sweet potato soup. Sultry, super tasty, this soup will rock your socks off. Sip the antioxidant and phytonutrient benefits of purple sweet potato with this nutrient dense soup.

Does a soup ever just feel so comforting? I enjoyed every spoonful. The first time I made this, I left it a little chunky with the purple sweet potato and it was so so good too. Try that if you prefer a chunkier soup. Let me know in the comments what consistency is preferred.

Ingredients: 

  • 3 bell peppers
  • 2 large purple sweet potatoes
  • 1 onion
  • 3 cloves of garlic
  • 2 tbsp coconut oil
  • a handful of fresh basil
  • 1/4 cup full fat coconut milk
  • 5 cups water
  • 1 tsp turmeric powder
  • 2 tsp smoked paprika
  • salt & black pepper

Instructions: 

Cut the peppers in half and remove the white portions and seeds. Chop the sweet potato into wedges. Peel onions and garlic and cut into small pieces. Toss all ingredients into soup pot and boil on low for 30 minutes, until all are softened. Set aside to cool. Puree the soup with a high speed blender or with a vitamix. The vitamix soup setting is a dream. Taste, and add more spices if desired. Serve warm, topped with cilantro and smoked paprika. Enjoy!
