Superfood Strawberry Rhubarb Crisp.
I am so happy to finally post this recipe. Holy moly it is a favorite. Sweet, tangy. It has become one of my summer go to’s PLUS it is super easy! The hemp seeds add a super food accent to this dish BUT if you are feeling crazy mix in a few teaspoons of chia seed to the strawberry/rhubarb mixture to take it up a notch on healthy.
Ingredients:
- 2 cups rolled oats
- 1/4 cup of each: hemp seed, crushed walnuts, chickpea flour, shredded coconut
- 2 Tbsp coconut oil
- 2 cups chopped rhubarb
- 2 cups chopped strawberry
- 1/4 cup maple syrup
Instructions:
- Toss your rhubarb and strawberries with the maple syrup.
- Grease your baking pan with a little coconut oil.
- Mix all the dry ingredients.
- Mix in the coconut oil with the dry ingredients until it becomes a coarse texture.
- Toss the fruit into the bottom of the greased pan.
- Layer the dry ingredients and coconut oil evenly on top.
- Bake at 350 degrees for 20-25 minutes, usually until bubbly and golden.
Let cool and ENJOY!
