Hello Monday French Toast. This was a delightful start to my day! French toast. Heavenly goodness. Incredibly easy to make for breakfast, brunch, or even dinner. You will want to add it to your staple recipes!
Ingredients:
- 4 slices of your favorite bread, preferably whole grain, thick slices work best!
- 1 cup non-dairy milk (I prefer unsweetened almond milk)
- 2 Tablespoons organic silken tofu (or Vegan-egg replacer, make 2 servings per instructions)
- 1 teaspoon maple syrup
- 1 teaspoon vanilla
- 1/2 teaspoon sea salt
- 1/2 teaspoon cinnamon
- dash of nutmeg (optional)
Instructions:
1. Blend all ingredients until smooth.
2. Lightly oil a large frying pan with coconut oil.
3. Dip the bread slices into the mixture, covering both sides. Cook over medium-low heat, flipping once, until golden and crispy on both sides.
Serves 2.
Add one ripe banana or a handful of blueberries to the mixture before blending for some added micronutrients and flavor. You can always just simply serve topped with your favorite fruit.
Berries are my favorite for extra antioxidants. Bananas always pair SO well with cinnamon.
