Blackberry Baskets.

Well, we all know how plans can go and this morning was one of those mornings. I fully intended to make a scrumptious blackberry pie. Instead, I was fully delighted with what ensued…

Simple and Sweet. Blackberry Baskets. 

For SIX baskets, 

Ingredients:

  • 3 cups blackberries
  • 1/2 cups organic stevia
  • 1 tablespoon spelt flour
  • One homemade pie crust (see my Apple pie recipe for a SUPER easy and perfect pie crust)
  • 1 tablespoon vegan butter
  • Pinch of light coconut sugar to top

Steps:

  1. Preheat oven to 350 degrees. 
  2. Prepare crust and roll out so that you are able to cut six squares that are 4 in x 4 in dimensions.
  3. Fold stevia and spelt flour together. 
  4. In a bowl combine your blackberries and stevia/spelt mixture, forming a chunky cobbler filling consistency. 
  5. Lay out your 4×4 crust squares and spoon in filling allowing enough room to fold crust up into a “basket.” This might take one for trial and error so see the best amount. To fix edges of crust, wet your fingertips and gently press edges of crust at top together to seal. Do this slowly, not having too much water on your fingertips. 
  6. Bake until golden at 350.
  7. Gently butter top of basket, sprinkle with coconut sugar, ENOY. 

Theses are super easy and can be modified with your favorite fruit or veggie concoctions
